Oh, I haven’t done a food post in a while. All day today I had a craving for something light and fresh for dinner – I fancied a salad but absolutely didn’t fancy any kind of lettuce. I don’t know if this makes sense to anyone else but it makes sense to me.
So, after a few minutes browsing the web for some inspiration that could fit with the ingredients I had at home, I came across a recipe for a White Bean, Tuna and Tomato Salad. Lovely.
Of course I adapted it, left out the tuna, increased the tomatoes and only used the parsley, but I really liked it. Especially the simple dressing.

In bookish news, I am still reading and enjoying Cyril Hare’s Death Walks the Woods, which I will probably finish later tonight.
After this, I am looking to start Elisabeth Sanxay-Holding’s The Blank Wall, which I am quite excited about because it is one of the titles re-discovered by Persephone Books, who have an impeccable taste in stories.
I know exactly what you mean about lettuce. That salad looks great, except for the tomatoes. 😀
