I promise this will not become a permanent feature, but I wanted to share that I’ve tried the Mango Black Bean Chipotle Coke Chili recipe, that @WhiskeyintheJar shared recently.
It’s pretty fab, and the mango is a lot less weird than I thought. I did use a lot less Coke than the recipe calls for, tho.
Anyway, back to Richard and Allie in Dead Corse now.

With mango and coke, I’d assume this is some sort of sweet chili? Sweet and spicy perhaps?

Yes, it is. But I left out much of the cola…I just didn’t see the point of all the sugar. The mango was unexpectedly nice, but I also used less than the recipe called for. (I wanted to have some mango left over for breakfast today.)

I really liked it. But then I do like mango and chili (pepper) sauces/dressings etc. Like I said I held back on the sweet but it was sweet enough. 🙂
I made a big pot of it, so some went into the freezer for mid-week dinners.
